| Black Beans and Rice |
Ingredients
½ pound dry black beans
2 tablespoons olive oil
½ cup onion, chopped
¼ cup green pepper, chopped
2 cloves garlic, minced
1 teaspoon oregano
1 packet sazón (Latino seasoned salt, see below)
2 tablespoons cooking wine or cider vinegar
1 teaspoon salt
¼ teaspoon ground pepper
4 servings rice
Cooking Instructions
Soak and rinse beans.
In large saucepan, soak beans in 4 cups water. DO NOT DRAIN.
Meanwhile, heat oil in a skillet over medium heat.
Add onion, pepper, and garlic; cook until tender, about 5 minutes.
Add remaining ingredients.
Stir mixture into beans in saucepan.
Bring to boil, reduce heat, cover, and simmer until beans are tender.
Serve over hot cooked rice. |
